OSTI extra-virgin organic olive oil is produced as a blend and as a monocultivar. Both of our varieties are made by crushing olives and extracting the juice, without the use of any kind of chemicals or refining. Our oil is simply the juice of fresh, healthy olives, which contains quality health-promoting nutrients, such as polyphenols and tocopherols. Both are powerful antioxidants that can inhibit the activities of free radicals in the human body and aid in the maintenance of an effective immune system.
We start the harvest very early, at the beginning of October, in order to obtain an excellent high quality olive oil. The olives, hand-picked, are pressed within twelve hours of picking, by a grinder in a continuous cycle, a process called cold extraction. We use a modern mill that has organic certifications, is solar powered, and doesn’t pollute the environment. The oil is stored in stainless steel tanks under nitrogen, at a constant temperature.
It is medium fruity, with a balance between bitter and peppery, very low in acidity and also rich of polyphenols and tocopherols.
The blend is golden in color with vivid emerald reflections. This accurate mixture
of organic olives, gives this variety of oil a medium fruity flavour, with a balance
between bitter and peppery. It has an aroma with notes of ripe tomato, celery, boiled
artichokes, finished off by dried fruits: pine nuts, almonds and walnuts.
